This is from a collection of recipes from books I own, but which I haven't myself tried yet. However, you can have faith that at least the authors themselves have tried them, so they're not deadly or anything.
No syrup is added, so the alcohol content will be high. Whenever a recipe calls for whole cherries, pierce them to the stone. The alcohol should permeate to the stone, which imparts additional desirable flavors. Almost any fresh fruit can be substituted for this recipe.
Wash and stem cherries and place them on a towel to dry. Gently pu cherries into a 1-quart jar. Pour sugar over cherries. Do not stir or shake. Pour vodka or brandy over sugar and cherries. Do not stir. Cover tightly with a lid and put the jar on a high shelf. Let stand for 3 months without stirring or shaking. Strain and filter into a 1-quart bottle. The cherry meat will be dissolved.
