Grate or finely chop the two whole quinces, peel and seeds included and place in 2 quart jar. Add vodka and sugar and seal the jar. Shake the jar well, and place in a room temerature place. I keep mine in the pantry off the side of the kitchen. Then, every other day for two weeks, shake the jar well. Then after that, shake the jar once a week for the next month. Then, strain and filter the liquid. This process gets a good quince flavour, and the colour can be a nice sunset shade, depending on the quince. My family has been doing this in France for generations. I use it as a nice after dinner drink, or to use to cook with pork.
