Homemade Apple Cordial (Talmoor) Recipe

From correspondent "Talmoor":

I let my apples sit until they had softened a litle and then cored and cubed them. Put the apple chunks in a sealable bottle, I used a 1 gallon bottle from my local homebrewing store. Add the vanilla beans broken into pieces about an inch long and the cinnamon whole. Add enough vodka to cover all of the solids. For me this was a 750 ml bottle of Popov® vodka. Let sit for about 2 weeks, shaking every thing up every couple of days.

At the end of the 2 weeks, strain out the solids and add about a cup to a cup and a half of sugar syrupor to taste). Cap container and let age, at 3 months this was pronounced very good.

Comes out tasting kinda like a glass of apple pie.
